Gold Fish and Rock Lobster!!

Student’s Choice, I made one fish and one lobster (with chef’s fine assistance)

I got to help making the pulling and blowing sugar this time mostly because I wanted to make the gold fish and need the color. I prepared the ice bath and chef did the rest. I did get to work with the boiling hot sugar, keep it moving so crystals do not form. Fold mat over and over slapping the outside to flatten the sugar as it cools enough to work with. Then we stretched it/pulling and pulling, then cut into workable pieces with a scissor

Body of Lobster

Here is the body of the lobster, you can see it is beginning to look like a lobster. Chef gave it a spray of black at the end to give it a more realistic appearance

Lobsters are not as hard as they look and I am glad I made the attempt.

I am really going to miss this class and everyone in it. Thank you Chef Sedig for everything. You are an excellent educator. You are funny and patient and have a lot to teach us. Phoenix College and students are lucky to have you!!
