Fondant Cake

In week two we made gumpaste flowers and leaves. We made green leaves, calla lilies, roses and daisies, Gumpaste is a sweet edible sugar dough usually made from sugar and glucose was invented in 1888. Should not be confused with fondant. It can be used to cover cakes, to mold flowers etc. to create decorations for cakes. Gumpaste will harden completely, so it is ideal for creating the bigger cake decorations, or for the bigger flowers. We used gumpaste that was already made. We choose a color theme for our cake, adding food color to match the theme. We rolled out the dough then cut the paste using molds, we then made the center of the flower then the leaves and petals. We will assemble them in week number three to decorate a 6” cake. The specific flowers made were Calla Lilies, roses and daisy with assorted leaves.

This product dries quickly so we need to keep the product covered or moist until using each piece. Daisy’s fall apart easily, my roses need larger petals on the flower as it is built out, meaning I will need to roll the outer petals larger. Here is chef putting the final touches on the calla lilly. Nicely done chef.
