Royal Icing, Airbrush Gum-paste flowers and Rolled Fondant

Airbrush Tools and Colors

There are many tools used to air brush cakes. Chef demonstrated the use. It really makes the cakes and flowers much more realistic and whimsical.

Here is Chef showing us the basics.

Below are the different colors we used Use the color strait for a darker more bold effect or add a bit of water for a lighter more pastille or subdued color

Week Three : Lots of Demonstration this week. We learned how to airbrush colors onto gumpaste flowers that we made in week two. Only use airbrush colors, no other dies. Test the color before applying and clean the cup when done. Making Royal Icing is pretty easy, made batch for six students. Power sugar, egg whites and crème of tarter for stabilizing. Royal icing is great for piping flowers, like roses, apple blossoms and leaves. Using a nail flower, place in left hand (if right handed), piping bag with royal in right hand. Make a puddle of icing, with the smaller edge up, make the three inner petals at same height. One petal starts in the middle of the last. Do the same for next row using 5-7 petals as in nature always use odd numbers. Next roll fondant out in circle, dampen Styrofoam, using the rolling pin maneuver the fondant on top of cake. Take a fondant smoother smooth fondant on to cake. Decorate using piped Royal Icing and airbrushed flowers. Chef demonstrated 7-9 different boarders.

The correct way to hold the piping bag and tip

Chef advised that edible lacquer makes flowers very beautiful, found a recipe:

Edible Varnish 1 t. gelatin 3 t. water 1 t. liquid glucose Sprinkle gelatin in the water. Let stand until it becomes spongy. Dissolve until clear over hot, not boiling water, Add the liquid glucose and stir until ingredients are well combined. Pour this mixture into an airtight container.

Here is the completed fondant cake, now it's time to decorate with our gum paste, air-brushed flowers and leaves!
